Braided Butterflies


Ingredients: Yeast dough Braided Butterflies

  600 g flour
40 g yeast
1/4 l tepid milk
50g butter
2 eggs 1 tsp. salt
1/8 tsp.ground nutmeg
zest of half a lemon
1 egg yolk

Sieve the flour in a bowl and form a pit. Put the crumbled yeast in the pit of the flour, add the milk to the yeast and stir the two. Cover the bowl with a damp kitchen towel and let it rest for 15 min. in a warm place. Melt the butter and knead it with the eggs, salt, nutmeg,lemon zest and the flour until you have smooth, dry dough. Cover the bowl and let it rest again for 15 min. in a warm place.

Slice the dough into 16 pieces of equal size and roll out in1/2 cm thick rolls. Form butterflies or stars with the rolls. Cover the ends with egg yolk and press them on gently. Place everything on a lined baking tray and let it rest for another 15 min. covered with a towel. Preheat the oven to 250C. glaze your butterflies or stars with the remaining egg yolk and bake for 20 min.
