Grittibaenz (Swiss Santa Claus)

  500g flour
30g yeast
1/4 l tepid milk
50g butter
50g sugar
1 egg
a pinch of salt
zest of half a lemon
1 egg yolk

Sieve the flour in a bowl and form a pit. Put the crumbled yeast in the pit of the flour, add the milk to the yeast and stir the two. Cover the bowl with a damp kitchen towel and let it rest for 15 min. in a warm place. Melt the butter and knead it with the egg, salt, nutmeg, lemon zest and flour until the dough blains. Let the dough rest for another 15 min. Preheat the oven to 200C. Slice the dough in equally weighted pieces. Form one ball and two rolls out of each piece. Form a Santa figure with this. Slice the remaining dough in strips and put them on the figures. Cover the figures with the beaten egg yolk and bake for 20 - 25 min. Let them cool on a cooling rack.
