  200g flour
1 Tsp. backing soda
1 pinch of salt
1 egg
1 pack vanilla sugar
100g sugar
100g butter

100g chopped almonds
50g pistachios
50g candied cherries
50g candied lemon peel

200g quince jam
1 egg white
1 pinch of salt
40g sugar

Knead the flour, backing soda, salt, egg, vanilla sugar and the butter until you have a smooth dough. Roll out the dough and cut out circles with a cookie cutter and place them on a lined backing tray. Back the cookies for 10-15 minutes at 180 C, the should not be brown. Blend the almonds, pistachios, cherries, lemon peel and the quince jam. Beat the egg white with the sugar and a pinch of salt until it forms peaks. Blend this with the quince mixture and cover the cookies with it. Bake for another 5-8 minutes.
