Mulled Wine Cookies
For about 100 cookies:
250g softened butter
1 pack vanilla sugar
4 whole eggs
2 tsp. baking soda
1/8 l mulled wine
For the glaze:
250g icing sugar
4-5 tbs. mulled wine
for the decoration: 100g chopped almonds
Cream the butter, sugar and vanilla sugar in a large bowl until light
Preheat the oven to 180°C. Cover to baking trays with pan liner.
Sift the flour and baking soda over the butter mix. Grind the chocolate and combine with the mixture.
Pour the mulled wine into the bowl and knead everything until you have a smooth dough. Put the dough on the baking trays and smooth the dough out until it is even.
Bake for 20 min. on the middle rack of the oven. Let cool on the tray.
Mix icing sugar with mulled wine and glaze the dough with it. Sprinkle chopped almonds over it. Wait untill the surface looks dry, should be within the hour, and slice into 3x4cm slices.
