3 whole eggs
pinch of salt
100g quince jam
100g chocolate icing
125g ground hazelnuts
Beat the butter with the sugar until the butter is soft and light. Combine with the flour, eggs and the salt. Knead until you have smooth dough. Cover the bowl with a damp cloth and let the dough chill in the fridge for half an hour.
Roll out the dough 1/2cm thick on a well floured surface. Preheat the oven to 180°C. Cut out round cookies with a cookie cutter with 5cm diameter. Place the cookies on a lined baking tray and bake for 15-20 min. Roll out the marzipan between two sheets of cellophane 2-3mm thick and cut with the cookie cutter circles the same size as the cookies.
Cover one cookie on one side with quince jam, place a marzipan circle on it and a jam covered cookie on top of this. Melt the chocolate icing and brush the chocolate on the side of the cookie sandwich. Roll immediately in the hazelnuts.
