White Gingerbread


Ingredients: Gingerbread White Gingerbread

  2 egg whites
200g icing sugar
1/8 tsp. cinnamon
fine lemon zest of one lemon
200g ground almonds
50g chopped candied lemon peel
20g chopped candied cherries
about 75 round wafers 4cm diameter
50 g chopped candied orange peel

Beat the egg white and add the icing sugar bit by bit until it forms peaks. Then add the cinnamon, lemon zest, almonds, candied lemon peel and the candied cherries.

Put the wafers on a lined baking tray. Place a little of the mixture with two teaspoons on every wafer. Preheat the oven to 150C. Decorate the cookies with the candied orange peel.

Bake for 10-15 min. They are ready if the surface of the cookies is dry.
