  275g flour
250g cold butter
300g sugar
1 pack vanilla sugar
1/2 tsp. ground cinnamon
1 tsp. gingerbread spice-mix
2 tsp. baking soda
1 whole egg
1 egg yolk
250g ground hazelnuts

Filling:
300g almond paste
150g icing sugar
1 egg white
1 tbs. cream
150g hazelnuts

Recipe:
 
Blend the flour with the butter and the rest of the ingredients until you have a firm dough. Wrap the dough in cellophane and let it chill for 30-40 min. in the fridge. Roll out half the dough to a 30x40 cm square and put it on a lined baking tray. Blend the almond paste with the icing sugar and the egg white. Roll out between cellophane sheets to a square the same size as the first portion. Lay the rolled out almond paste mix on the first portion. Roll out the second half of the dough to a square the same size as the first one and lay it on top of the almond paste and press together. Mix egg yolk with cream and brush on the cookie doug. Press on hazelnut halves, lay them in steady rows. Preheat oven to 175°C and bake for 25-30 min. Cut the dough in 3x3 cm squares so that every square has one hazelnut on top.
