Brown Cake


Ingredients: Misc. Brown Cake

  60g molasses
100g sugar
1 pack vanilla sugar
125g butter
1/8 tsp. ground cloves
1/8 tsp. ground ginger
1 tsp. cinnamon
250g flour
1/2 tsp. baking soda
40g chopped almonds
40g finely chopped candied lemon peel

Mix molasses, sugar, vanilla sugar and butter with two tbs. water and heat gently in a saucepan. Do not let this boil. Let the mixture cool after everything is dissolved. Stir the cloves, ginger and the cinnamon into the nearly cold mixture. Stir the flour and baking soda into the mixture. Combine with the almonds and the candied lemon peel. Let cool for an hour.

Make rolls 3cm in diameter out of the dough, wrap them in cellophane, and place them in in the freezer for an hour.

Preheat the oven to 170°C. Slice in thin pieces and place the cookies on a lined baking tray. Bake for 8-10 min.
