100 g honey
65 g sugar
250 g flour
1 1/2 tsp. baking soda
1/2 tsp. cinnamon
1/8 tsp. ginger powder
1/8 tsp. ground cardamom
1/8 tsp. ground cloves
1/8 tsp. allspice
(or substitute all with gingerbread spice)
flour to roll out the dough
pan liner for the tray 250 g marzipan
100 g icing sugar
1 tbs. rum

Melt the honey, sugar and the butter on low heat until the butter is melted. Let cool for a few minutes. Knead the flour, spices and the egg into the honey mixture until smooth using a hand mixer with beat hooks.
Let the dough cool for an hour at room temperature. Split the dough into four portions.
Roll out each portion on a little flour (or between cellophane sheets) to strips about 8x20 cm long.
