Santa cookies


Ingredients: Gingerbread Santa cookies

  500g honey
1/2 cup water
250g flour
250g rye flour
100g finely chopped candied lemon peel
20g gingerbread spice-mix
20g baking soda
1 egg yolk, 1 egg white
50g icing sugar
blanched, halved almonds
pistachios and sugar sprinkles

Boil the honey with water and let cool. Sieve the rye flour, flour and blend with the candied lemon peel and the gingerbread spice-mix. Combine with honey and knead until you have a firm dough. Add the baking soda at last. Let the dough chill for 24h in a covered bowl chill.

Preheat the oven to 200°C. Prepare a cardboard Santa pattern. Put the dough on a well-floured baking sheet and roll out the dough. Cut out a Santa figures using the the pattern. Place the figures on a lined baking tray and bake on the middle rack of the oven for 15 min. Let the figures cool on a cooling rack. Blend the egg white with the icing sugar and stir until you have a smooth glaze. Decorate the figures. The sugar icing can be used to glue everything to the figures. Make a beard and face with teh icing too.
