Gingerbread Family


Ingredients: Gingerbread Gingerbread Family

  200g butter
550g honey
1 pack gingerbread spice-mix
15g cocoa
1200g flour
1 pack baking soda
pinch of salt
2 whole eggs
2 egg whites
375g icing sugar
100g chocolate icing
a few blanched almonds
pistachios and raisins
candied lemon and orange peel

Stir the butter, honey, sugar, the gingerbread spice-mix and the cocoa in saucepan and heat gently until the sugar is completely absorbed. Let cool. Sieve the flour with the baking soda and salt in a bowl and combine with the honey mixture and the eggs. Knead until you have a smooth dough. Let the dough rest overnight covered with a damp cloth. Prepare patterns for the gingerbread family. Preheat the oven to 200°C. Roll out the dough 1/2cm thick and cut out the figures. Place them on a lined baking tray and bake for 12-15 min. Melt the chocolate icing in a double boiler. Beat the egg whites with the icing sugar until you have a smooth sugar icing. Decorate the figures with the sugar icing, choclate, pistachios, raisins and the candied fruits.
