Ingredients: Gingerbread Gingerbreads

  500g honey
1/8 l vegetable oil
250g sugar
700g flour
1 pack baking soda
250g ground almonds
2 tsp. ground cinnamon
1/8 tsp.ground cloves
1/2 tsp. allspice
a pinch of salt
3 eggs
100g candied lemon peel
100g candied orange peel
3 tbs. condensed milk
Decoration: 100g peeled almonds
100g candied lemon peel
100g candied cherries

Boil the honey and oil in a saucepan and stir in sugar. Sift the flour and baking soda together, add almonds, all of the spices and candied fruit. Stir the honey mixture into the flour mixture, beating until you have a smooth, firm dough. If the dough is too soft just add a little more flour. Leave the dough covered with a damped towel for an hour in the fridge. Preheat the oven to 200°C. Place the dough on lined baking tray and pat the dough with well-floured hands until it covers the tray evenly. Use a brush to cover the dough with the condensed milk. Cut the dough with a knife into squares of 7x7 cm. Decorate each square with almonds, cherries and the candied lemon. Bake for 30-45 min on the middle rack of the oven. Let cool and then cut the squares.
